To Be or Not To Be Gluten-Free #2

I had no idea that wheat was such a controversial topic until I began doing research in preparation for writing this blog series. After much reading and sifting through articles, I believe that, to really get to the heart of whether a gluten-free diet is appropriate for those of us that don’t have celiac disease or gluten sensitivity, the discussion must become global and include some history as well as a few details on farming, biotechnology, and economic trading. There is a multitude of information on the Internet and, in my opinion, more to this issue than simply considering whether to include gluten in your diet. I have done my best to present all sides (in the following three parts) and provide, well, food for thought. Read the first part of the series here.

Part 2 – Your Wheat is Not Your Grandmother’s Wheat

You may be surpWheat Pic1rised to know that other parts of the world are way ahead of the U.S. when it comes to gluten-free eating. Argentina recently initiated a national program for the detection and control of celiac disease and, for residents, health insurance companies “must cover the cost of alternative flours and gluten-free mixes” for celiac patients.  Both Irish and Canadian citizens receive tax deductions for the extra cost of gluten-free foods and in the United Kingdom, people with celiac receive gluten-free products as part of their health plan benefits.  In Italy, all children are tested for celiac disease by age six and any Italian over age ten diagnosed with celiac receives a monthly stipend of 140 euros for gluten-free foods.

Even though celiac disease has been around for centuries, it was once considered very rare in the U.S. Joseph Murray, MD, a gastroenterologist at Mayo Clinic, saw frequent cases of celiac disease as a medical student in Ireland during the 1970s. When he moved to the U.S. in 1988, Dr. Murray saw one patient per year with gluten intolerance and by 1997, his celiac cases numbered 100 annually. He decided to investigate the phenomenon and compared celiac incidence in blood samples taken from 50 Air Force recruits in the 1950s with blood taken from young men living in Minnesota. The present-day men were 4.5 times more likely to have celiac disease, which means something in the environment has changed.

Enter wheat. No one really knows why celiac disease is affecting more people, but many believe that the transformation of wheat is to blame. Wheat products sold today are very different than wheat that was consumed in the early 20th century all the way back to Biblical times and, indeed, it seems that the incidence of celiac disease increased at about the same time as the changes in wheat.

So how has wheat transformed? And why? In the 1950s, Norman Borlaug, an American biologist, took an agricultural research position in Mexico and cross-bred wheat that resulted in high-yield, disease-resistant varieties that were cheaper to grow. By 1963, Mexico not only fed its own growing population but was also exporting wheat. At this time, large numbers of people were starving in both India and Pakistan; however, by 1970, thanks to the new cross-bred variety, wheat yields nearly doubled in these countries. Borlaug also gave China and parts of South America the ability to feed their burgeoning populations and is often credited with saving hundreds of millions people across the globe from starvation. (He is one of three Americans who won the Nobel Peace Prize, the Presidential Medal of Freedom, and the Congressional Gold Medal.)

Plant researchers have discovered, however, that Borlaug’s wheat had fewer nutrients than before and became a refined wheat that raised blood sugar leOLYMPUS DIGITAL CAMERAvels very quickly. Additionally, bread preparation is not at all similar to what it was at the turn of the century. Grains “…were soaked, sprouted, and fermented, and bread was baked using a slow-rise yeast.” Today, manufacturers bleach flour with agents like benzoyl peroxide (typically used to treat acne) and bake bread with quick-rise yeast, which results in bread with little nutritional value.

It turns out that Grandma’s bread was baked with more than love!

To Be or Not to Be Gluten-Free #1

If you have had a Spirited Life/CHI health screening in the past year, you have likely interacted with me at some point. In both the spring and fall of 2013, I counseled screening participants on their results at many churches across the state and, as of April of this year, I am now coordinating the screenings. The blog below is the first in a series of nutritional topics that arose during my discussions with many of you. Thus, I am responding to your questions. Upcoming topics include the lowdown on eggs, sorting through sweeteners and sugars, and the perils of trans fats. Stay tuned!

Part I – What is Gluten and How Can it Affect Me?

Gluten-free eating has become very trendy and the market for gluten-free products is booming. Many grocery stores now stock gluten-free products, some restaurants provide gluten-free items in addition to their standard fare, and celebrities like Gwyneth Paltrow, Jenny McCarthy, and Oprah Winfrey have touted the benefits of gluten-less diets. However, is eliminating gluten from your diet the way to go? If you have celiac disease, the answer is a resounding ‘yes’. If you are not gluten sensitive, the answer may not be straightforward and information populating the Internet can be confusing. Thus, let’s start with what is clear-cut.

What is gluten? Gluten is a protein found in wheat and other grains, such as rye and barley, which gives bread its sponge-like Wheat Pic3texture. When individuals with celiac disease ingest gluten, the immune system attacks the small intestine. Over time, the small intestine loses its ability to absorb nutrients, such as calcium and iron, and severe nutritional deficiencies can develop. Even small amounts of gluten can cause a lot of damage and the only treatment is a strict gluten-free diet.

Common symptoms of celiac disease include diarrhea and weight loss, although many people experience little, if any, digestive distress. Some people have a sensitivity to gluten without having celiac disease, which means that they cannot metabolize gluten, and may have symptoms as severe as those of celiac disease. Still others have a wheat allergy, which is one of the most common allergies in the United States. Simply inhaling wheat flour can trigger an allergic reaction for some.

People with celiac disease or gluten sensitivity must eat a gluten-free diet to feel better. Many foods are naturally gluten-free, such as fruit, vegetables, meat, poultry, seafood, beans, legumes, nuts, and dairy products. A number of grains like rice, corn, potatoes, quinoa, and nut flours are also gluten-free.

While many commercial products are labeled ‘gluten-free,’ some are not. However, as of August 5th, 2014, all foods labeled gluten-free must meet the requirements of gluten-free labeling (you can read more here at the Food and Drug Administration website). It is important to read labels and remember that ‘wheat-free’ does not necessarily mean ‘gluten-free’. Soups and sauces, for example, are one of the largest sources of gluten since many manufacturers use gluten as a thickener. Individuals with a wheat allergy should, of course, avoid foods that contain wheat. In addition to gluten, wheat contains other proteins that include albumin, globulin, and gliadin. Most people are allergic to only one of these. Again, it is extremely important to read labels and, in this case, ‘gluten-free’ does not necessarily mean ‘wheat-free’. In Europe, for example, foods may be labeled gluten-free but contain wheat starch, the powder remaining after gluten removal from wheat flour. Wheat starch is often used as a thickening agent in gravies and processed foods. Some unexpected sources of wheat may be ice cream, potato chips, hot dogs, candy, salad dressings, soy sauce, marinara sauce, and beer. Low Back Pain Explained

Clearly, I’ve been in the car too much lately because I’ve come across another NPR nugget to share.  This story features a primary care physician who “prescribed” a YouTube video for a patient complaining of low back pain.  The video is from Dr. Mike Evans, famous for his whiteboard drawings about many different health topics (and featured on this blog before).

Dr. Evans begins the video by saying that low back pain is extremely common; in fact, it is one of the top 2 reasons why people go to the doctor, and it accounts for 40% of all missed work days.  He goes on to describe a variety of low back pain conditions and ultimately suggests how you can create a “Back Resilience Plan” to prevent recurrence.  Summed up in three words, Dr. Evans’ conclusion is that in most cases, “Movement is Medicine.”  Check the video out here:

In the NPR story, the patient who viewed this video at her doctor’s recommendation returned to the office for her next appointment with a success story of her own.

NPR: How Americans Really Experience Stress

During the month of July, as I’ve been traveling from here to there, I have caught bits and pieces of NPR’s latest series on stress.  There have been some really interesting stories, and I’m sharing a few of my favorite highlights below.

For starters, there’s a piece on the overall picture of stress in America.  NPR teamed up with the Robert Wood Johnson Foundation and Harvard School of Public Health to conduct a survey of 2,500 Americans.  They found that 49% of respondents had experienced a major NPR stress image_Josh Neufeldlife stress within the last year, with the most frequent type of stressor being health-related.

When broken down by demographics, there were some interesting findings.  For example, young adults were more likely to name “too many responsibilities” as their primary stressor, whereas older adults named health problems.  Looking at income, people making below $20,000 named (perhaps unsurprisingly) finances and work problems as their biggest worries.  People making over $50,000 named work problems and too many responsibilities.  The most common response to stress? Seventy percent of people reported sleeping less than usual.  For more on these statistics, click here.

Another segment focused on the connection between food and stress.  A Harvard University researcher says, “When we feel stressed we seek foods that are going to comfort us immediately, but often times those foods lead to surges and crashes in hormones and blood sugar that increase our susceptibility to new stresses.”  Other researchers are looking into foods that make us more resilient in the face of stress.  For example, foods that are nutrient rich, specifically those that are high in omega-3s, help bolster against stress.  Some good stress-busting foods include:

  • Eggs
  • Dark, leafy greens like kale or Swiss chard
  • Pumpkin seeds
  • Fish rich in omega-3 fatty acids, like sardines, salmon or canned tuna
  • Flaxseed
  • Dark chocolate

One of the more upbeat and fun segments was about how Americans deal with stress.  Seventy-one percent of respondents said that connecting with friends or family is their go-to form of stress relief.  In terms of what works for people, turning to hobbies and time outdoors were reported as being most effective.  Click here for the article.  Actually, just watching this short video, put together using animations and live interviews of people talking about their favorite stress-relieving activities, sent me into a state of relaxation!

Living in Gratitude

One of my children recently gave me a book entitled Living-in-Gratitude_imageLiving in Gratitude.  We’re a family of readers and often talk about what we’re reading or what we think the other person might like.  But when I started reading this book I wondered if it was given as a secret message for Mom.  I kept hearing in my head “Are you grateful? Is gratitude part of your life”?  Then I would say back to the voice, “Of course I practice gratitude…..well, I think I do…..well, maybe I don’t all the time…. well how do you practice gratitude anyway?”

The book is a month-to-month guide for the practice of gratitude. The author, Angeles Arrien, a cultural anthropologist, says that “practice is meant to be active, rigorous, and dynamic.  To practice is to take action that supports change and provides a discipline for incorporating and strengthening new values, skills and character qualities.”  I was especially interested in how a practice of gratitude might affect health in particular, since health and well-being are pretty important to most of us.  Our first thought may not be about gratitude as a basic health practice.

Even though it’s July, I started at the beginning of the book with January.  I worried that this was all going to be very shallow like “in January be thankful for a new year—a fresh start.”  Then I realized that the message from my daughter might be: give up on the cynicism for just a bit and read the book.  Right off the bat the author quotes Hopi Elder Thomas Banyacya who reminds us to vision and in visioning one must stop, consider, change and correct.

Arriens details this practice, which offers a way to align our vision with our choices.  This makes sense.  I was already feeling a tiny bit grateful for a new tool.  Unfolding in this January chapter are also the concepts of blessings, learnings, mercies and protections:  what they mean and the importance of paying attention to them.   As we identify blessings, learnings, mercies, and protections we have additional tools to develop a framework of intentionality, which as the author states, “helps us enter frequently and joyfully into the life changing state of being which is gratitude.”

Further into the book is another important question that addresses all areas of health and wellness.  Dr. William Stewart, author of Deep Medicine and the medical director of the Institute for Health and Healing at the California Pacific Medical Center, suggests that we ask this question:  Are the choices I am making health enhancing or health negating?  And he’s talking about all realms of health from the spiritual to the financial. Dr. Stewart and many others have demonstrated that health improves or declines according to the choices we make.

Arriens points out that it is well documented that the daily practice of gratitude increases health and well being.  Genuine expressions of gratitude reduce stress, develop positive attitudes and performance, strengthen the immune system and increase our experience of joy and happiness.

This book encourages gratitude through reflection, questioning, action and practice.  It recognizes the importance of research and intellectualism but then goes to the deeper meaning found only in the heart. I’m only up to March but I’m beginning to think that Living in Gratitude might just change the way I think about wellness.

Get in touch… with massage therapy

As part of our final farewell to Group 2 pastors, the Spirited Life team offered chair massages during their concluding workshops. Throughout that entire day, pastors were able to sign up for ten-minute chair massages provided by local massage therapists. While a few were hesitant, many absolutely enjoyed it! Some even signed up for a second (or third!) massage as time permitted.

It was so gratifying to watch as pastors allowed themselves to enjoy such a gift. Some pastors were even inspired to discuss the origins of their tensions, and many left the experience considering the possibility of setting up future massage appointments.

While massages are typically wellness massage-285590_640perceived as an indulgence, they are actually centuries old in existence and provide a variety of benefits to a person’s mental and physical health. For instance, people use massages to relieve pain, rehabilitate sports injuries, reduce stress, increase relaxation AND reduce anxiety and depression.

It is true that massages can be expensive. However, there are cost-effective ways that you can occasionally treat yourself to this amazing form of self-care. For example:

  • Seek out Massage Schools in your area. To eliminate the guesswork of finding a reputable massage therapist in your area, the North Carolina Board of Massage & Bodywork Therapy has a list of schools that provide licensed instruction for massage therapy. Some of the schools offer discounted rates because the students are in the process of being licensed. A list of those schools can be found here.
  • Contact your local Community College. Another good resource is your local community college as they occasionally offer massage classes for individuals, independent from a degree program. Taking a massage class through a community college’s continuing education department is a great way to pick up some basic pointers. I mention this option because it’s one that can be enjoyed by you and your significant other.
  • You can locate a massage therapist in your area through this locator.  When you call for an appointment, ask about special pricing packages.  Some places offer deals where when you buy a certain number of sessions up front, you get a session free.  

If you have never had a massage before – treat yourself! If you’ve enjoyed a massage in the past – maybe it’s time for another!

A Summer Treat

Using frozen bananas to make ice cream seems to be all the rage lately.  Even though I’ve ice creamsnagged several recipes for this non-dairy frozen delight from Pinterest over the last several months, I had never made it until last night.  I’m here to tell you that if you need a sweet treat this summer that won’t leave you feeling guilty, this ice cream will do the trick!

The general idea is that you take some frozen bananas and use them as the base.  When pureed in the blender or food processor, frozen bananas become soft and oh-so-creamy.  From there you can use as many different mix-ins as you can dream of.  Want strawberry ice cream?  Throw in some chopped frozen strawberries.  Want chocolate ice cream?  Mix in a couple tablespoons of cocoa powder and a little vanilla extract.  While a subtle taste of bananas remains, the flavors of the mix-ins are what stand out.

In addition to being low calorie, this “faux” ice cream is also great because it is gluten-free and vegan!  The recipe I used was for Vegan Chocolate Peanut Butter Ice Cream from The Lemon Bowl blog.  For each 1/2-cup serving (this recipe makes 4 servings), there are 108 calories and 4.4 grams of fat.

Step-by-step instructions for making one-ingredient ice cream along with some more flavor ideas can be found here. Once you get the hang of it, you won’t even need a recipe!

Pastoral Health and Sexuality, Part III

 This is the third in a special series on Sexual Health by guest bloggers Dr. Bill Bixler and Greg Hill, LPC (see their bio below the article).  Click to read the first  and second installments.

In the first post we looked at the importance of sex and sexuality for pastors and the dangers inherent in minimizing that part of their lives.  The second post explained how pastors can become vulnerable to the misuse of their sexuality, acting out via cybersex activities or by having extramarital relationships.

Pornography-viewing and other sexual acting out often serve a dual function of relieving stress and offering escape into a fantasy world. Such sexual acting out indicates a pastor’s life is precariously out of balance. Here are some tips for keeping your life in better balance:

  • Boundary-setting: One of the greatest stressors for pastors stems from their inability to set clear boundaries. What are some ways to set clear boundaries? Take time off. Construct a metaphorical fence around your day off. Let it be known that that time is vital for replenishment. Barring a dire church emergency, defer non-essential requests from parishioners. This can be done with grace and humor and will decrease burn-out symptoms.  Delegating responsibilities is another way to set a boundary. Avoid micro-managing and succumbing to the belief that the pastor needs to do it all. Learning to say “no” is an important aspect of boundary setting. For example, set time-limits on phone conversations and meetings.  Pastors often have a need to please everyone, which is impossible.
  • Self-care: Engage in self-care, including physical exercise, adequate sleep, proper diet. In addition, self-care includes time for pleasurable activities, time with friends, developing a hobby. Seek out a spiritual mentor with whom you can be transparent. sunset-13444_640Take time for your prayer and devotional life.
  • Nurturing marriage: Healthy marriages require quality time together. Keep a date night sacred. Take a weekend away. Talk to your spouse, especially about your feelings—fears, doubts, frustrations. Your partner is there, not to fix everything for you, but to provide care and support. Mutual emotional vulnerability can significantly enhance sexual intimacy. Talk with each other about your sexual needs and desires. Be playful; don’t get stuck in the same sexual routine.

This is not an exhaustive list of ideas but provides some seed-thoughts on rebalancing one’s life.  However, many pastors reading the above will likely consider the writers to be naïve or even delusional. The objection would be something like, “We don’t have time to engage in these activities. Church work is too demanding.” But this objection takes as a given, what we feel needs to be reexamined. It is incumbent upon the pastor to shape his/her ministry in healthy ways to reduce stress and the potential for sexual acting-out.

To succumb to the thinking that the above is impossible places pastors in untenable positions. To survive and thrive in ministry requires more than dedication to one’s pastoral vocation. It requires attending to the basics, balancing life, and caring for self as one cares for others. In so doing, the risk of needing to escape into sexual acting-out is significantly diminished.

Two final thoughts.

Firstly, for those who find they have been unable to stop pornography-viewing or other acting-out behavior, counseling with a professional trained to deal with these types of issues can be very helpful. These problems are treatable in a therapy context which assures both acceptance and confidentiality.

Secondly, the pastors who come to us for help are usually male, despite the fact that female pastors also struggle with sexual issues. We are aware that these posts may be unintentionally geared more toward male pastors. We would love to hear from female pastors regarding gender-specific differences related to the topics we have discussed.

Pastoral Health and Sexuality, Part II

Pastor John survived another Sunday, but just barely. Still awake after midnight, he stares at the  bedroom ceiling while a host of stressful thoughts bear down on him—parishioners’ criticism of his sermon, worry about the budget shortfall, power struggles with the assistant pastor. He needs some escape, some respite from the pressure. Almost without thinking John slips out of bed without waking his wife, tiptoes to his study, and proceeds to view pornography on his laptop until 3 a.m.

This scenario is, unfortunately, not rare.  Various surveys place the number of pastors viewing pornography between 30 and 54 percent in a given year.  Also, these surveys do not include additional acting-out behaviors, such as participating in sexual chat rooms, hiring prostitutes and escorts, and affairs with church members or staff.  If we included those statistics the above percentages undoubtedly would be higher.

Cybersex (the term used to describe all sexual activities on the internet) has three Computer_keyboardcomponents, the three A’s, which make it so compelling. It is:

  • Accessible– the click of a mouse or touch on an IPAD
  • Affordable– most pornography on the internet is free
  • Anonymous– it can be viewed in complete privacy

Many pastors exhaust their physical, spiritual, and emotional resources taking care of their flock. If stress and anxiety are not managed well and healthy relationships are neglected, pornography becomes a source of escape and emotional self-medication. The fantasy world of internet pornography becomes a substitute for real relationships and intimacy.

In addition, pastors who do not take the time to nurture their own marriages and friendships are at risk of cybersex activity. Marriage therapist John Gottman describes two types of couples: those who turn toward each other and those who turn away. Pastors who turn away may turn toward pornography or someone outside the marital relationship. An absence of genuine intimacy can lead to the false intimacy of extra-marital relationships or fantasy relationships via pornography.

As in the case of Pastor John from our introductory paragraph, cybersex can provide instant, but temporary, escape from the stresses of church work. In addition, some pastors seek to numb deeper emotional wounds:  emotional or physical abuse from childhood, memories of a perpetually critical father or mother, constant fears of not being a good enough minister, spouse, or parent.

Various psychological strategies are employed to allow pastors to continue their behavior unimpeded by self-restraint:

  • Compartmentalizing occurs when that part of the pastor’s life which is unacceptable to him/her is intentionally split off from the rest of life.
  • Minimizing is a type of rationalization, such as, “it’s not that bad because it’s only pictures, not actual sex with someone.”
  • Denial does not even recognize that there is a problem—“I don’t do it that often so it’s no big deal.”

But it is a big deal. Pornography-viewing and other cybersex activities generate intense shame and guilt, create emotional and sexual alienation in marriage, open clergy to accusations of hypocrisy, place ministerial vocations at risk, and severely weaken the spiritual vitality of the pastor.

In the next post we will examine how pastors can significantly reduce vulnerability to sexual acting-out, affirm healthy sexuality, and provide guidance to those who have tried many times to stop but have been unable.

Remembering God’s Gift of Water

Question: Are we forgetting how important water is?

Clean water is a goal for many Americans.Is God’s gift not good enough?
I have had some interesting conversations about water lately. As a Wellness Advocate, I have learned a lot about the importance of water for our physical health. Today I want to share a short reminder about why water is not only important for our health, but also why it is especially essential to us as healthy Christians.

Water is mentioned a total of 722 times in the Bible, more often than faith, hope, prayer, and worship. In the Bible, it doesn’t take long for water to be mentioned. Right away in Genesis 1:2, “The earth was a formless void and darkness covered the face of the deep, while a wind from God swept over the face of the waters.” Water is such an essential component of life, it was created on the very first day.

In Revelations water is mentioned again, and it is almost the last words of the Bible.  Revelations 22:17, “The Spirit and the bride say, ‘Come.’ And let everyone who hears say, ‘Come.’ And let everyone who is thirsty come. Let anyone who wishes take the water of life as a gift.” Water flows throughout the scripture, and this should remind us of its importance…both spiritually and physically.

St. John Damascene summarized, “Water, then, is the most beautiful element and rich in usefulness, and purifies from all filth, and not only from the filth of the body but from that of the soul, if it should have received the grace of the Spirit”. (An Exact Exposition of the Orthodox Faith– Book 2: Chapter 9). Water has the power to heal, as can be seen from the stories of Naaman – the Syrian cured from his leprosy in the waters of Jordan (2 Kings 5:1-14) and the annual miracles at Bethesda in Jerusalem (John 5:1-9). Water has the power to purify, to provide deliverance, and it can also destroy evil and enemies as in the stories of the Flood (Genesis 6:17) and the flight of Israel from Egypt (Exodus 14:1-15:21).

Roughly 70% of an adult’s body is made up of water, and about 85% of the adult brain is made up of water. Water is essential to life, and all living things need water to survive. So why do we as God’s children, sometimes take this gift…His gift of water for granted?

Jesus, the source of Living Water, extends an invitation to all who thirst. We take communion to remember His body…broken for you, and His blood… shed for you. We remember that water and blood poured from Jesus’ wound (John 19:34), while he was crucified. Water is given to us by Our Lord Almighty. Let us remember this, and honor His blessings daily. My father never drank water, and he spent the last 3 years of his life on kidney dialysis. My brothers and sisters, I challenge you to drink more water daily.
